We are practitioners from Poland. For more than twenty years we have worked inside poultry plants — on the line, not around it.

Jesteśmy praktykami z Polski. Od ponad dwudziestu lat pracujemy w zakładach drobiarskich — przy linii, a nie obok niej.

In that time we have not seen a single non-stun line where the bird is truly held at the moment of the cut. Every one of them leaves the same gap in animal welfare: birds that struggle, strike each other and, too often, a cut that misses.

Przez ten czas nie widzieliśmy ani jednej linii bez ogłuszania, na której ptak byłby naprawdę przytrzymany w chwili cięcia. Każda zostawia tę samą lukę w dobrostanie: ptaki, które się szamoczą, uderzają się nawzajem i — zbyt często — cięcie, które chybia.

So we worked out how to close that gap ourselves.

When the throat is cut, the bird fights. With several slaughtermen working the line you have several agitated birds in reach of each other, striking hard enough to break bone. Plants running hard halal without stunning report anywhere from 20% to 80% of wings broken.

Przy podcinaniu ptak się broni. Gdy przy linii pracuje kilku rzezaków, macie kilku zdenerwowanych ptaków w zasięgu swoich skrzydeł, uderzających na tyle mocno, że łamią kość. Zakłady prowadzące twardy halal bez ogłuszania raportują od 20% do nawet 80% połamanych skrzydeł.

The damage sits around the shoulder joint — bruising and haematoma that reach the fillet and the tenderloin.

You downgrade the wing, and you downgrade the two most valuable cuts on the bird at the same time.

Ritual slaughter requires cutting the veins and the lateral arteries without severing the spinal cord, so the bird bleeds out properly. That depends on one thing: the slaughterman being able to see the neck and place the knife.

Ubój rytualny wymaga nacięcia żył i tętnic bocznych bez naruszenia rdzenia kręgowego, żeby ptak poprawnie się wykrwawił. Zależy to od jednego: czy rzezak widzi szyję i może przyłożyć nóż.

Birds are not the same size. On conventional restraint the neck sits high on one bird and low on the next. When the man cannot see what he is cutting, one of two things happens:

Ptaki nie są jednakowe. Przy konwencjonalnym unieruchomieniu u jednego szyja jest wyżej, u drugiego niżej. Gdy rzezak nie widzi, co podcina, dzieje się jedno z dwojga:

the bird is already dead when the cut is made, or
the neck is not cut at all, and a live bird reaches the scalder.

In ritual slaughter neither is an operating error. It is a failure of the exact thing the certificate attests to.

It closes around the bird on its own — no operator pushing birds into place, which is where conventional wing protection needs extra people and slows the line down.

Welfare is not the soft argument hereDobrostan nie jest tu miękkim argumentem

In slaughter without stunning, the welfare of the bird is decided in a few seconds: how it is held, and whether the cut is made correctly the first time. Those are exactly the two things this system changes.

Przy uboju bez ogłuszania o dobrostanie ptaka decyduje kilka sekund: jak jest trzymany i czy cięcie jest wykonane poprawnie za pierwszym razem. To są dokładnie te dwie rzeczy, które zmienia ten system.

A bird that is held does not thrash. It does not fight its neighbour, and it does not fight the restraint. A slaughterman who can see the neck cuts once, in the right place.

Przytrzymany ptak się nie szamocze. Nie walczy z sąsiadem i nie walczy z unieruchomieniem. Rzezak, który widzi szyję, tnie raz i we właściwym miejscu.

Each bird is held on its own, wings against the body. No flapping, no strikes between neighbouring birds, no self-injury against the line.

Każdy ptak jest trzymany osobno, skrzydła przy ciele. Bez trzepotania, bez uderzeń między sąsiednimi ptakami, bez urazów o linię.

The neck is presented in the same place on every bird, so the slaughterman does not hunt for it and does not cut twice.

We publish what we can stand behind. A bird held firmly is calmer, and it is reasonable to expect that it bleeds out better — we have not studied this and we do not claim it. We would rather measure it with you than promise it.

Where you run electrical stunning, the protectors are not needed. The whole platform lowers hydraulically or electrically out of the process — same line, same shift, nothing dismantled.
